Basic pancakes with sugar and lemon

Basic pancakes with sugar and lemon

Trust Delia Smith to show you exactly how to make classic pancakes - and enjoy Pancake Day without any flops.
Ingredients

For the pancake mixture

110g/4oz plain flour, sifted

pinch of salt

2 eggs

200ml/7fl oz milk mixed with 75ml/3fl oz water

50g/2oz butter

To serve

caster sugar

lemon juice

lemon wedges

Preparation method

Sift the flour and salt into a large mixing bowl with a sieve held high above the bowl so the flour gets an airing. Now make a well in the centre of the flour and break the eggs into it. Then begin whisking the eggs - any sort of whisk or even a fork will do - incorporating any bits of flour from around the edge of the bowl as you do so.

Next gradually add small quantities of the milk and water mixture, still whisking (don't worry about any lumps as they will eventually disappear as you whisk). When all the liquid has been added, use a rubber spatula to scrape any elusive bits of flour from around the edge into the centre, then whisk once more until the batter is smooth, with the consistency of thin cream. Now melt the 50g/2oz of butter in a pan. Spoon 2 tbsp of it into the batter and whisk it in, then pour the rest into a bowl and use it to lubricate the pan, using a wodge of kitchen paper to smear it round before you make each pancake.

Now get the pan really hot, then turn the heat down to medium and, to start with, do a test pancake to see if you're using the correct amount of batter. I find 2 tbsp is about right for an 18cm/7in pan. It's also helpful if you spoon the batter into a ladle so it can be poured into the hot pan in one go. As soon as the batter hits the hot pan, tip it around from side to side to get the base evenly coated with batter. It should take only half a minute or so to cook; you can lift the edge with a palette knife to see if it's tinged gold as it should be. Flip the pancake over with a pan slice or palette knife - the other side will need a few seconds only - then simply slide it out of the pan onto a plate.

Stack the pancakes as you make them between sheets of greaseproof paper on a plate fitted over simmering water, to keep them warm while you make the rest.

To serve, sprinkle each pancake with freshly squeezed lemon juice and caster sugar, fold in half, then in half again to form triangles, or else simply roll them up. Serve sprinkled with a little more sugar and lemon juice and extra sections of lemon.

Daily diet soda may increase risk of heart attack, stroke

Daily diet soda may increase risk of heart attack, stroke:

(Reuters) - Diet soda may benefit the waistline, but people who drink it every day may have a heightened risk of heart attack and stroke, according to a new U.S. study.

Although the researchers, whose work appeared in the Journal of General Internal Medicine, found that older adults who drank diet soda every day were 44 percent more likely to suffer a heart attack, their research did not prove that the sugar-free drinks alone were to blame.

There may be other things about diet-soda lovers that explain the connection, said lead researcher Hannah Gardener, of the University of Miami Miller School of Medicine, and her team.

"What we saw was an association. These people may tend to have more unhealthy habits," she said.

She and her colleagues tried to account for that, noting that daily diet-soda drinkers did tend to be heavier and more often have heart risk factors such as high blood pressure, diabetes and unhealthy cholesterol levels.

Gardener and her team studied 2,564 New York City adults who were 69 years or older at the study's start. Over the next decade, 591 men and women had a heart attack, stroke or died of cardiovascular causes -- including 31 percent of the 163 people who drank a diet soda daily at the start of the study.

Overall, daily consumption of diet soda was linked to a 44-percent higher chance of heart attack or stroke, compared with 22 percent for people who rarely or never drank diet soda but had a heart attack or stroke.

Gardener said that if diet soda itself contributes to health risks, it's not clear how.

Some research in rats suggests that artificial sweeteners can end up boosting food intake and weight, but whether these results translate to humans is unknown.

"I don't think people should change their behavior based on this study," Gardener said, noting that further study is needed to confirm a connection between diet soda and cardiovascular trouble.

Striving For Imperfection- Valentine's diet

Striving For Imperfection- Valentine's diet
By Scott Marcus of the Ukiah Daily Journal
Updated: 02/07/2012 02:30:39 PM PST

Be forewarned; the following appears to be two divergent thoughts with seemingly nothing in common with the title of this column. However, plug on; all shall coalesce by the conclusion.

Thought one: The Internet is like an office on a really, really, really huge scale; it is filled with marvelous facts that can be extremely important (or completely useless). The predicament is finding them and determining into which category they fit.

Thought two: Writers, such as myself, are periodically (but thankfully not often) faced with the curse of "writer's block," a dreaded affliction which attacks creative sorts. Its symptoms include, but are not limited to: stress, inability to focus, lack of inspired thought, and a blank stare (usually at an empty page). As deadline approaches a rising sense of panic also wells up within one's chest. Writer's block also has a major side effect: the desire to consume uncontrollable amounts of sugary, snack-like substances.

Since such eating leads to guilt (and a protruding stomach), I have developed alternative, less-caloric methods to set free my Muse: an out of the ordinary technique involving Internet search engines. (See, the topic is beginning to gel; aren't you glad you stuck with me?) Instead of searching for subject matters, rather I pose questions.

For instance, it seemed apropos that this week, my message would involve a nod toward Valentine's Day. Yet, my brain was a brick, solid, heavy, unmoving; nothing entered.
So, I asked of the all-wise Google, "What healthy meal could I prepare on Valentine's Day?" Forever obligingly (as I'm sure would be Yahoo), it provided me with 394,000 options in 0.13 seconds. Assuming three meals a day, and no duplication of recipes, it would take 359.81 years to try every meal listed. As much as I would love to be celebrating with my sweetheart in the year 2367, I find it unlikely; therefore I chose the first selection: Heart Healthy Dinner for Romance.

Developed by a nutritionist with many letters following her name, she suggested that to boost romantic tendencies in my partner, I should choose a meal with soluble fiber, omega-3 fatty acids, folates (which I thought one scraped on skin to smooth it), monounsaturated fats, and soy protein. Not the usual fare to which I am accustomed, I investigated further the type of banquet that would grace our table and discovered it would consist of lentils, beans, wheat germ, flaxseed oil, spinach, more lentils, fortified grains, yet more lentils, and soy milk. Recipes were included for Spinach Squares, bean salad with lentils, and steamed vegetables.

In my mind, I pictured a romantic repast for two, tablecloth newly ironed, candles aglow, with legumes as far as the eye can see. I imagined how healthy and proud of my accomplishments I would be come February 15; what a role model! Shocked into reality by the realization that nowhere on this list is a single, solitary, piece of chocolate; I decided that's just wrong, canned the whole harebrained scheme and queried the search engine, "Where can I find a chocolate sampler quick!?"

A Very Honest Review of Fat Burning Furnace Program - It Really Works!

Movie and discussion focus on weight-loss obsession

Movie and discussion focus on weight-loss obsession

by Thom Myers

Feb. 9, 2012 | WMU News

KALAMAZOO--The sequel to the award-winning film "America the Beautiful" will be shown free of charge at Western Michigan University in advance of National Eating Disorder Awareness Week.

"America the Beautiful 2: The Thin Commandments" will be shown at 7 p.m. Thursday, Feb. 16, in Room 2452 of Knauss Hall. Discussion with the audience by a panel of experts follows the film. The panel includes Darryl Roberts, creator of "America the Beautiful," and local experts, including a nutritionist, a medical doctor and a psychologist.

The 2011 documentary is not rated and has a run time of 104 minutes.

The film offers a passionate and sometimes humorous documentation of society's never-ending battle to slim down. The movie also weighs in on the so-called obesity crisis and features commentary by experts who believe that being overweight may not be as harmful as many think.

"Governments and health organizations have repeatedly lowered acceptable body weight standards so a large portion of the American population is now considered to be overweight," says Dr. Jon Robison, a WMU associate professor and leader in the Health at Every Size movement. "As a result, people of all shapes and sizes have developed an intense fear of fat that plays havoc with their self-esteem and promotes disordered eating and exercise behavior."

Eating disorders are serious, life-threatening illnesses. The film screening promotes the 25th annual National Eating Disorders Association's Awareness Week, Feb. 26-March 2, with the goals of preventing eating disorders, reducing the stigma surrounding eating disorders, and improving access to treatment.

The Southwest Michigan Eating Disorders Association, WMU's Health Promotions and Department of Dance organized the event, which was made possible by a donation from Forest View Hospital in Grand Rapids, a mental health treatment facility that houses one of the few comprehensive eating disorder programs in the state.

Ten weight-loss myths

So much is said about losing weight that it can be hard to sort truth from fiction. Here's the truth about 10 common weight-loss myths.

Recommended physical activity levels for adults

Adults (19-64 years) should do 150 minutes every week
Older adults (65+ years) should do 150 minutes every week

Adults who are overweight are likely to need to do more than the recommended amount of activity in order to lose weight, and this activity should be accompanied by changes to diet.

1. Starving myself is the best way to lose weight
Crash diets are unlikely to result in long-term weight loss. In fact, they can sometimes lead to longer term weight gain. The main problem is that this type of diet is too hard to maintain. Your body will be low on energy, causing you to crave high-fat and high-sugar foods. When you finally give in and eat those foods, you will often eat more calories than you need, causing weight gain. Learn more about a healthy diet in Eight tips for healthy eating.

2. A radical exercise regime is the only way to lose weight
Not true. Sensible weight loss involves making small changes that you can stick to for a long time. That means building regular physical activity into your daily routine. Adults between 19 and 64 should get at least 150 minutes of moderate-intensity aerobic physical activity - such as fast walking or cycling -every week, and those who are overweight are likely to need more than this in order to lose weight. Learn more in Physical activity guidelines for adults. To shift 450g (1lb) a week, you need to create a calorie deficit - that is, more calories used than consumed - of 500 calories per day. This can be achieved by eating less, moving more, or, best of all, a combination of both.

3. Slimming pills are effective for long-term weight loss
No, they're not. Slimming pills alone will not help you keep the weight off long term. They should only be used when prescribed by a doctor.

4. Healthy foods are more expensive
In fact, healthy foods are not necessarily more expensive than their unhealthy alternatives. You'll typically pay more for a high-fat, high-salt ready meal than you would if you had bought fresh ingredients and made the meal yourself.

5. Foods labelled ‘low fat’ or ‘reduced fat’ are always a healthy choice
Be cautious. Foods labelled 'low fat' have to meet legal criteria to use that label. Labels such as 'reduced fat' do not have to meet the same criteria, and can be misleading. A reduced-fat snack should contain less fat than the full-fat version, but that doesn't automatically make it a healthy choice: it could still contain a lot more fat than, say, a portion of fruit. Low-fat foods also sometimes contain high levels of sugar. Learn more in Fat: the facts.

'Eaten in the right quantities, carbohydrates will not cause weight gain'

6. Margarine contains less fat than butter
Margarine and butter contain different types of fat. Margarine is usually lower in saturated fat than butter. But it's more likely to contain hydrogenated fats. Hydrogenated fats, also called trans fats, may be more harmful to health than saturated fats. To lose weight, and for heart health, reduce the amount of saturated and hydrogenated fats you eat. If oil in margarine has been hydrogenated, this has to be listed on the ingredient listing on packaging, so check labels carefully. Learn more in Eat less saturated fat.

7. Carbohydrates make you put on weight
Eaten in the right quantities, carbohydrates will not cause weight gain. A 2003 study published in the New England Journal of Medicine concluded that dieters on the best-known low-carb diet, the Atkins diet, tended to lose weight not because they ate fewer carbohydrates, but simply because they ate less overall. Eat wholegrain and wholemeal carbohydrates such as brown rice and wholemeal bread, and don't fry starchy foods when trying to lose weight. Learn more in Starchy foods.

8. Cutting out all snacks can help you lose weight
Snacking isn't the problem when trying to lose weight: it's the type of snack. Many people need a snack in between meals to maintain energy levels, especially if they have an active lifestyle. Choose fruit or vegetables instead of crisps, chocolate and other snacks that are high in sugar or saturated fat.

9. Drinking water helps you lose weight
Water does not cause you to lose weight, but it does keep you hydrated, and might help you snack less. Water is essential for good health and wellbeing. Sometimes thirst can be mistaken for hunger; if you're thirsty you may snack more. Drink around two litres of fluid a day. Learn more in Water and drinks.

10. Skipping meals is a good way to lose weight
Skipping meals is not a good idea. To lose weight and keep it off, you have to reduce the amount of calories you consume, or increase the calories you burn through exercise. But skipping meals altogether can result in tiredness and poor nutrition. You will also be more likely to snack on high-fat and high-sugar foods, which could result in weight gain.

Sugar Can Hinder Your Efforts

I liked this article because although fairly obvious, we seldom think about it.

Sugar is a natural sweetener that comes in most foods that we eat. It is a natural element in some foods and tastes great as well. It also helps enhance the taste of many foods that may have a somewhat bland flavor to them. A large percentage of people love to include sugar in their daily diet and use it on a daily basis. However, sugar can be one of the worst things for your body as it will hinder you with your weight loss and fat-burning goals.
Over the years, experts have determined that including too much sugar in your diet can cause health problems as well as assist in weight gain. In fact, it has become increasingly evident that sugar is a major factor in chronic disease and obesity in many people. This has come as a surprise to a large portion of the scientific community who assumed that sugar would not harm you if you used it sparingly. It turns out that sugar has become another element that we all need to write on our enemies list of foods and sources that will block our weight loss and fat-burning aspirations.
Sugar is loaded in many of the foods we eat and liquids that we drink and this can create problems for us all in the long run. In today's world over thirty-two percent of Americans are overweight from excessive amounts of sugar in their diet and one-third are obese from it as well. It is time that we learn all that we can to put a stop to this major disturbance to our bodies by this one source that we never thought could cause us so much harm.
As you carry excess weight around, it can cause many health problems such as heart conditions, diabetes, kidney disease and possibly stroke. It doesn't take a medical degree or training to notice that today's society is gaining weight at an increasingly high rate than in earlier years. This is due in large part to lack of exercise and mobility, inability to make the correct dietary decisions and a blatant overload of their sugar intake.
Glucose is a natural sugar that our bodies were designed to use as energy and could be absorbed properly into our bloodstreams easier to burn as energy for our daily lives. Nowadays, the sugar element of fructose has been implemented into everybody's diet and this has led to many problems with body absorption and has put a stop to any weight loss goals that you may have set for yourselves. Fructose is a major cause of health problems in the average person's diet. It is not that fructose alone will hurt you, but excessive amounts of fructose have been known and proved to be very dangerous for you in several ways.
This is where the effort must begin to keep an eye on your sugar intake. Many people believe that they have everything under control and they are on the right track as far as their diet is concerned, but they must also realize and pay attention to their sugar intake as well. This is not meant to frighten you away from using sugar. It is an attempt to make you understand the right way to use it. As far as including sugar in your diet, it is actually unavoidable in many ways. The main thing you have to remember to do is watch your sugar intake and use it wisely. Enjoy your foods, but do not over-indulge in the wrong ones and your body will function properly and at its best capability.

What Type of Exercise I Can Easily Do During the Day to Lose Unwanted Weight?

I liked this article because it is something we can all do easily, without a Gym !

Importance of Exercise

Exercise and nutrition always go hand in hand for optimal health and general well being. Exercise increases your metabolism, the process of burning calories obtained from food. Exercise, especially aerobic exercise, plays a major role in the weight management process. Of course, one should not just rely on exercise for weight loss and overlook the power of balanced nutrition. Exercise and balanced nutrition complement each other by increasing each other's effect synergistically.
With moderate exercise, the blood circulation is improved and that results into proper distribution of the nutrients to all the body organs for their proper growth. Exercise also helps the body with the elasticity of the muscles. A lack of exercise may result into tissue injuries, such as pain in the lower back, neck and shoulder areas. Lack of exercise due to the busy and stressful lifestyle in the western world is the second biggest factor leading to weight gain and obesity, after excess calorie and fat intake. Therefore, cutting down on total calorie and fat intake, incorporating moderate exercise in daily schedule, and consuming a diet balanced in macro and micro nutrients would lead to a healthy weight management.
How much physical activity do adults (18 to 64 years of age) need?
Below are the exercise guidelines for adults from Center for Disease Control and Prevention:
Adults need at least:
• 2 hours and 30 minutes (150 minutes) of moderate-intensity aerobic activity (i.e., brisk walking) every week, and
• muscle-strengthening activities on 2 or more days a week that work all major muscle groups (legs, hips, back, abdomen, chest, shoulders, and arms).
Here is the good news: 10 minutes at a time is fine.
We know 150 minutes each week sounds like a lot of time, but you don't have to do it all at once. Not only is it best to spread your activity out during the week, but you can break it up into smaller chunks of time during the day. As long as you're doing your activity at a moderate or vigorous effort for at least 10 minutes at a time.
Now, here is the type of exercise you can easily do during your day to lose unwanted weight. Give it a try:
1. Try going for a 10-minute brisk walk, 3 times a day, 5 days a week. This will give you a total of 150 minutes of moderate-intensity activity.
2. Find the farthest parking spot when you go out shopping in the mall or grocery store and walk back.
3. Instead of taking elevator or escalator next time, challenge yourself with taking stairs.
